Bellevue Ingredients and Solutions, a company based in France has launched new range of the durum wheat flours, which can possibly be adapted to all the processes of bread making and the applications of bakery. According to the company, the Gem Plus range has been the answer to most of the challenges like softness, freshness, machinability, volume, and annealing after freezing, that have been faced by the manufacturers.

These wheat flours are very use for usage and they are also used for the production of the consistent quality of breads, that will be allowing the processes for being optimized but they are still adhering to an approach of clean label.

The durum wheat flour is also known for its bright golden colour and unique taste, and it has also been packed with protein and fibre, and it has also increased hydration, which means a better yield, along with less thickness and less defects.

The range of durum wheat includes the Gem Plus Soft, that is responsible for bringing softness and freshness for the soft breads such as brioches and milk bread, the Gem Plus Volume for the purpose of adding the volume for the croissants, baguettes and ciabatta, the Gem Plus Bake-Off, which has been specifically developed for the frozen dough, and Gen Plus Rheol for the easy-to-work dough such as chapati and laminated baguettes.
